Marshmallow Waldorf Salad



I’ve tried, I’ve really tried, but I can’t get with vegetables and fruit mixed together. Yes, even when there are mini-marshmallows in the mix.

So it should come as no surprise that I wasn’t looking forward to making Waldorf Salad. This great-aunt caker luncheon staple is usually served alongside ham slices, radishes, devilled eggs and forced laughter. Waldorf Salad, for those of you unawares, calls for apples and celery. Folks, if the Good Lord had wanted apples and celery to be eaten together, He would’ve created appelery.

Now, because I make a pledge not to waste food on this blog, I had to eat this salad for lunch every day for an entire week. And, truth be told, it started to grow on me by the end. The walnuts and the marshmallows were like buffers that made the celery and apples a little more tolerable. I stress a little. Suffice to say, I won't be inviting celery and apple to come swim in my aboveground pool anytime soon. The rest of you? Grab your flotation device and come on down. The pool is officially open and my sarong is on.

3 c. diced unpeeled apples
1 Tbsp. lemon juice
1 c. miniature marshmallows
1 c. chopped celery
¼ c. chopped walnuts
mayonnaise

Sprinkle the apples with the lemon juice. Add marshmallows, celery and nuts. Add enough mayonnaise to moisten. Toss lightly.

  1. I have undergone a bit of an epiphany with celery eating - hated it all my life, now quite like it. And it seems to me there's almost nothing that couldn't be improved by the addition of a packet of mini marshmallows. My friends would be surprised and delighted if i turned up to a summer luncheon with this (we really must start having summer luncheons)

    1. If you feel so inclined to bring this to a luncheon, by all means, go ahead. And if your friends say they like Waldorf Salad, they're lying.

  2. Being allergic to tree nuts has spared me many a caker salad over the years, and I am ever so thankful I never had to eat Waldorf Salad (I have a hard time believing this ever emerged from the kitchen of the Waldorf Astoria).

    Who can afford celery anyway? Where I live it is close to two dollars, and they trim all the leaves off, which gets my caker dander up because, "I'm paying for those celery leaves."

    Why does this salad look like it needs Cool Whip?

    1. I think Cool Whip might actually save this salad, Goody. There are few things in life that aren't improved by a healthy dollop of Cool Whip. I use it as shaving cream and don't look a day over 21.

  3. I can't remember about celery. I remember one with apples, grapes, walnuts and mayo...

    1. There's another version of Waldorf that calls for grapes, I think. Not that it would make this taste any better. Mayo + grapes = wrong.

  4. This is the salad that used to be billed as the classy salad at church potlucks. I can't even describe how much I hated it. I would eat carrot/raisin salad over this stuff. I commend you for eating it for a week.

  5. I think Waldorf salad is getting a bad rap here! I like it. In fact I just made it a few weeks ago but my recipe has blue cheese and raisins instead of the marshmallows. It was good and, yes, I ate it for days! I also like carrot raisin salad. So sue me!

    2. I agree I made some last week apples, celery,marshmallows, raisins, pecans, mayonnaise with a little red wine vinegar loved it since I was a kid in the 70’s still do use dried cranberries for thanksgiving I guess I have my mom to blame I still love it
