For those of you not familiar with Mimi’s blog, 1972: The Retro WW Experiment, it's all about Weight Watchers, less the Jennifer Hudson. (If I see another one of those “I am you, you are me” commercials, I’m going to throw a Twinkie at the TV.) Thankfully, our girl Mimi kicks it old school with 1970s Weight Watchers recipes. And if you think Caker Cooking has featured some food fuckery, check out Mimi’s Frankfurter Crown Roast, her Buttermilk Chicken Loaf and her – gulp – Fluffy Mackerel Pudding.
Who said being thin is glamourous?
While this Peanut Butter Cup Pie doesn’t have the sophisticated decadence of, say, Impossible Pie, it ain’t too shabby for a guilt-free, low-cal treat. I found the crust a little finicky and would've added some melted marshmallows for pliability, but I guess that would've defeated the low-cal purpose. And, in my defence, that's a dollop of low-fat Cool Whip in the photo.

1 1/2 oz. crispy type rice cold cereal (Editor’s note: Oh, for god’s sake. Just say Rice Krispies.)
4 tbsp peanut butter
1 tbsp honey
1 envelope (four 1/2 cup servings) instant reduced calorie chocolate pudding mix
2 cups skim milk
1 medium banana, sliced
In a small bowl, mix peanut butter and honey. Heat in microwave on high for 20 seconds. Stir in cereal. Mix well. Press mixture into bottom of a 9-inch pie pan. Chill. Prepare pudding according to pkg directions. Place banana slices over prepared crust. Spread prepared pudding over bananas & chill. Makes 4 servings.

I can only guess it was created sometime in the early 80's by a very hungry woman who was really craving some pie. It was typed up on ditto paper, copied and secretly passed around WW meeting rooms all over the land."
Ah--it's a member-created recipe. That explains it. Having read Mimi's blog as long as I have, I expected this to be called Low-Cal Peanut Butter Cup "Pie" and to be made with some kind of funky peanut butter flavored gelatin.

It's not bad, Veg-o-matic. The instant pudding tasted a little "envelopey" to me, but where have I heard that before?

DeleteP.S. Ready for some Heath Bar Coffee Cake? The recipe requires that the Heath Bars be shredded, and provides (strange) instructions to that end.
Veg-o-matic, I am SO ready for some Heath Bar, shredded or not. It's like a Skor bar, right? I'll be doing a special Skor-Bar-a-thon post on Monday.

ReplyDeleteI made this last week but forgot to post as it didn't stay around long. There's the impression as it's low-cal you can eat more, or maybe that was just me.
ReplyDeleteOne thing about the receipe, I found 1 1/2 oz rice krispies just a stupid amount, especially for someone who doesn't know imperial. It works out to be like 3/4 of 1/4 cup. I didn't find the rice krispies overpowering, I would chnage the receipe to 1/4 cup (scant) and live with the results.
This was a staple in the fridges of my mother's friends while I was growing up! None of us quite understood how something so amazingly good was "diet food. " 30 years later, I have scoured the Internet for the top secret recipe that was lost to the winds of my childhood... I can now die happy knowing I have found it, and saved it so I'm never without it again !
